Great travel writing feeds our hunger for armchair journeys while somehow making the armchair less comfortable. Series editor Wilson searched for the rare pieces that weren't "aggressively positive"; Kincaid chose finalists that she says "underline my sense of my displacement." True enough, whether discussing suburban Florida or the bullet-riddled border between Afghanistan and Pakistan, these essays and articles show us the overlooked and never-seen with curiosity, insight, engagement, and humility; none of these writers brags about being at home in the world. Standouts are many: in "Into the Land of bin Laden," Robert Young Pelton finds a soldier who says, "I have no idea who we are fighting"; in "Tight-Assed River," John McPhee sails with the men who pilot aircraft carrier-length barges down Illinois' narrow waterways; and in "Trying Really Hard to Like India," Seth Stevenson serves a stern rebuke to travelers who return with praise for a country simply because they made it there and back. Few people have stayed in one place as long as the Basque people have stayed in Basque Country, which spreads from northern Spain across the Pyrenees into France and stretches out to the sea. Basque Country has remained intact from the time of cave paintings to today. The Basque language is a language unlike any other; even Basque DNA is different from any other European DNA. So it should come as no surprise that the food of Basque Country, while similar to what is found in other parts of Spain and France, is distinct as to its place and people of origin. Restaurant owner and chef Teresa Barrenechea invites one and all to come sit at the Basque table and learn while enjoying.

Though nueva cocina has invaded Basque cooking, Barrenechea has intentionally left it aside for another book. She cleaves to tradition in The Basque Table, to the pinchos (like tapas), first courses, and main courses that make up the traditional meal served in Basque homes. It is a deceptively simple cuisine, something of a tightrope act, that demands of any cook the ability to select the best possible ingredients. When, in a dish like Chuletitas de Cordero (grilled lamb chops), you are only working with the chops, olive oil, garlic, flat-leaf parsley, and salt, there's no place to hide. And yet, when everything is exemplary and the chops come off the grill at the perfect moment, the effect in the mouth and in the heart and soul of any diner will defy description. A tough kind of simple, in other words.

A fierce pride shows in Barrenechea's recipe descriptions and food notes. She holds herself to the highest cultural standard. What she aims for and achieves is a replication in print, with an American kitchen in mind, of exactly how a certain dish should taste to the Basque palate.

So take heart in dishes like sweetbreads with garlic and parsley, crayfish in hot sauce, mushrooms with scrambled eggs, white bean stew, roasted fresh ham, chicken Basque style, fresh cod with red and black sauces, grilled prawns, and trout Navarra-style. If you are adventurous in your travel or are interested in knowing more than what is found in travel brochures, this book makes for interesting reading. It gives a basic geographic overview of the world and each major geographic region, providing insights about the geographic character of specific regions to show how it establishes a setting for tourism. All regions or countries have a brief overview of the cultural, physical, and tourism characteristics of the region or country. The cultural characteristics are in the form of cultural capsules pertaining to the people and some tips as to personal actions that are acceptable and others to be avoided. Following the analysis of the geographic character the text discusses the tourist attractions in each of the regions, focusing on the geographic features that are important for creating a desire to visit that region. The authors highlight the most significant attractions, which combine with the geographic facts of the region to form the uniqueness of the area for visitors. In some cases there are differences of opinions concerning which are the major attractions, but those presented in the text provide an overview of the character of each specific tourist destination region. Tourists themselves also create geography. An area with few tourists is different in character from an area with large numbers of visitors. The origin of tourists also affects the environment; as for example visitors from Great Britain create a different environment than those from France because of their differing expectations and resultant services.
