Since 1990, Jerry Traunfeld has been the chef at the Herbfarm, a restaurant-nursery nestled in the foothills of the Cascade Mountains in Washington State devoted to propagating an exceptional variety of culinary herbs, edible flowers, and greens. People wait months for a table at this restaurant, where Traunfeld's unaffected yet sophisticated cooking unfolds in a nine-course dinner. Reading his recipes, you understand why. It is hard to get through even the first chapter, on soups, without starting a shopping list for making Green Gazpacho, a cooling blend of cucumbers and green pepper with spearmint, parsley, and cilantro, or Herbal Chicken Noodle Soup, lavish with fresh basil, chives, tarragon, and marjoram.

After enticing you with the story of his signature dish, a green salad made with up to 30 ingredients, each literally harvested and assembled on the plate one leaf and blossom at a time, Traunfeld shows how, using more typical resources, you can construct a salad friends will declare a delicious work of art. Over the past 14-years Traunfeld has had a farm's worth of herbs to work with in his commercial kitchen and at home. He opened the doors to his commercial kitchen with The Herbfarm Cookbook. And now he takes us home with The Herbal Kitchen. Here's a hint: It's all about heightened flavor through the creative use of herbs.

There's the humble roasted oyster, for example. Traunfeld makes a sauce of fresh sorrel, butter, shallots, cream, and lemon juice. Each oyster sits in its half shell atop a dollop of the sauce and bakes until plump. They are served topped with fine strips of fresh sorrel. Briny oyster meets tart sorrel gentled with cream and butter. Does it get any better? You bet it does. Roasted Oysters with Sorrel Sauce is but an appetizer, along with Minted Lentil and Goat Cheese Strudel, and Spicy Verbena Meatballs.

Forget the high-carb, low-carb debate. The glycemic index (GI)--a measure of carbohydrate quality based on how quickly a food raises blood-glucose (blood sugar) levels--is the dietary key to health, say the authors. Contrary to other diets that treat carbohydrates as all alike, The New Glucose Revolution divides carbos according to their GI into two categories. One is high GI (less desirable): carbohydrates that break down quickly during digestion, leading to fast and high blood-glucose response. Examples are baked potatoes, sports bars, instant rice, corn flakes cereal, and baguettes. The other is low GI (more desirable): carbohydrates that break down slowly during digestion, leading to a gradual glucose release. Examples here are pasta, whole grains, fruit, legumes, and yams.

A low-GI diet is especially recommended for people with diabetes, abdominal overweight, and Syndrome X, say the authors, who have strong medical, nutritional-science, and diabetes education credentials. They explain the importance of understanding GI values, how GI is determined, health applications, and how to choose low-GI foods and balance the overall GI load. There's still a lot to learn about the healing power of plants, James Duke points out, but what we do know is already prodigious. Much of that knowledge is gathered in The Green Pharmacy, an A-to-Z guide to that relies on plant-based medicines to cure what ails us. Between the listings, Duke crams personal anecdotes from a lifetime of studying herbs, berries, and bark. For example, he relates how he worried about telling a pregnant niece that ginger could help alleviate her morning sickness because he'd learned from a pharmacologist that ginger could also induce miscarriage. Then he solved the mystery: he'd recommended ginger tea, which contains about 250 milligrams of ginger. The Chinese, he learned, use about 80 times that much to end pregnancies--another testimony to the amazing versatility of these natural medicines. --This text refers to an out of print or unavailable edition of this title.

Very readable and fun, The Green Pharmacy is the culmination of the author's 30 years of studying and using herbs. In an interesting mix of folklore and science, Duke, a botanist and authority on healing herbs, describes treatment protocols for over 120 health conditions. Although there is frequent reference to experts and studies, including up-to-date findings from the German Commission E monographs, no accurate references or bibliography are provided. Nonetheless, based on the author's credentials, this is recommended for larger collections.
