Product Review
A classic tome of gastronomic science and lore, On Food and Cooking delivers an erudite discussion of table ingredients and their interactions with our bodies. Following the historical, literary, scientific and practical treatment of foodstuffs from dairy to meat to vegetables, McGee explains the nature of digestion and hunger before tackling basic ingredient components, cooking methods and utensils. He explains what happens when food spoils, why eggs are so nutritious and how alcohol makes us drunk. As fascinating as it is comprehensive, this is as practical, interesting and necessary for the cook as for the scholar. --This text refers to an out of print or unavailable edition of this title.

From Publishers Weekly
Starred Review. Before antioxidants, extra-virgin olive oil and supermarket sushi commanded public obsession, the first edition of this book swept readers and cooks into the everyday magic of the kitchen: it became an overnight classic. Now, 20 years later, McGee has taken his slightly outdated volume and turned it into a stunning masterpiece that combines science, linguistics, history, poetry and, of course, gastronomy. He dances from the spicy flavor of Hawaiian seaweed to the scientific method of creating no-stir peanut butter, quoting Chinese poet Shu Xi and biblical proverbs along the way. McGee's conversational style—rich with exclamation points and everyday examples—allows him to explain complex chemical reactions, like caramelization, without dumbing them down. His book will also be hailed as groundbreaking in its breakdown of taste and flavor. Though several cookbooks have begun to answer the questions of why certain foods go well together, McGee draws on recent agricultural research, neuroscience Reviews and chemical publications to chart the different flavor chemicals in herbs and spices, fruits and vegetables. Odd synergies appear, like the creation of fruity esters in dry-cured ham—the same that occur naturally in melons! McGee also corrects the European bias of the first edition, moving beyond the Mediterranean to discuss the foods of Asia and Mexico. Almost every single page of this edition has been rewritten, but the book retains the same light touch as the original. McGee has successfully revised the bible of food science—and produced a fascinating, charming text.

Product Review
This grandfather of all people-skills books was first published in 1937. It was an overnight hit, eventually selling 15 million copies. How to Win Friends and Influence People is just as useful today as it was when it was first published, because Dale Carnegie had an understanding of human nature that will never be outdated. Financial success, Carnegie believed, is due 15 percent to professional knowledge and 85 percent to "the ability to express ideas, to assume leadership, and to arouse enthusiasm among people." He teaches these skills through underlying principles of dealing with people so that they feel important and appreciated. He also emphasizes fundamental techniques for handling people without making them feel manipulated. Carnegie says you can make someone want to do what you want them to by seeing the situation from the other person's point of view and "arousing in the other person an eager want." You learn how to make people like you, win people over to your way of thinking, and change people without causing offense or arousing resentment. For instance, "let the other person feel that the idea is his or hers," and "talk about your own mistakes before criticizing the other person." Carnegie illustrates his points with anecdotes of historical figures, leaders of the business world, and everyday folks. --Joan Price

Amazon.com Audiobook Review
We're constantly negotiating in our lives, whether it's convincing the kids to do their homework or settling million-dollar lawsuits. For those who need help winning these battles, Roger Fisher has developed a simple and straightforward five-step system for how to behave in negotiations. Narrated soothingly by NPR announcer Bob Edwards, Fisher adds the meaty portions of the material with a sense of playfulness. The blend of voices makes this tape easy to listen to, especially the real-life negotiating scenarios, in which negotiating examples are given. This is a must-have tape for every businessperson's car. (Running time: one hour, one cassette) --Sharon Griggins --This text refers to an out of print or unavailable edition of this title.

From AudioFile
The authors are principals at a Harvard-based program that studies and teaches negotiation. In this unabridged recording of their 1991 book, they explain the important differences between adversarial negotiating and negotiating within a framework of abstract principles. The source book was the first on negotiating that unpacked the schemas and strategies that drive various types of negotiation. It made sense in print and does so even more as an instructional audio. In terms of effectiveness, it puts to shame the audios of negotiating experts who are entertaining but who don't have the intellectual understanding of these scholars. An essential resource for any student of negotiating and a fine example of how good research and analytical thinking can be made into an appealing audio. Book Description
Colette peters, the celebrated queen of the confectionary arts, unveils an inspiring resource for serious home bakers, professional chefs, and aficionados of Colette's incredible edible architecture. The ingenious cake decorator - whose miraculous and luscious concoctions have appeared everywhere from White House Christmases to royal weddings - presents a master class in cake design and decoration, alongside an all-new selection of her own cake designs. With Cakes to Dream On, Colette's inspired creations can now be rendered into show-stopping cakes of your own.

Cakes to Dream On reveals the secrets to fashioning gorgeous and utterly distinctive cakes for all occasions - whether it's an opulent marriage reception (the majestic Ivory wedding Cake) or a fanciful children's party (the whimsical Homage to Dr. Seuss). Colette presents designs for cake architecture ranging from the imperial splendor of Dolce de Medici, to the elegant grace of Bride's Vintage Cameo, to the topsy-turvy daydream of Mad Tea Party.

Colette begins with the foundations: she illuminates step by step the process of constructing a multitiered cake, from determining serving sizes and choosing appropriate cake pans to making fillings, and ultimately stacking layers so they don't tumble off the table. Cakes to Dream On also discloses insider tricks of the trade: Colette's easy-to-follow instructions in techniques such as sugarwork, gumpaste, brush embroidery, and piping will help readers recreate the spectacular effects of this singular confectioner's toolbox.

Bakers - and their enthusiastic audiences - will discover that these sensual masterpieces tantalize the palate as much as they do the eye. Colette's cake recipes include the Coco-Loco Cake, an alluring marriage of coconut and coffee; the Meringue Buttercream and its luscious lemon, raspberry, and mocha variants; and the ambrosial caramel-tinged Heavenly White Cake.

As breathtaking as Colette's cake works appear, her clear explanations of technique are meant to stimulate readers' creative instincts and give them ideas for crafting their own distinctive confections. With more than 150 dazzling full-color photographs illustrating both processes and finished presentations, and more detailed instruction than ever before, Cakes to Dream On will inspire readers to create their own mouthwatering masterpieces. Colette's master class is truly a launchpad for cake lovers' own confectionary visions.

Product Review
With the basic principle that creative expression is the natural direction of life, Julia Cameron and Mark Bryan lead you through a comprehensive twelve-week program to recover your creativity from a variety of blocks, including limiting beliefs, fear, self-sabotage, jealousy, guilt, addictions, and other inhibiting forces, replacing them with artistic confidence and productivity.

This book links creativity to spirituality by showing how to connect with the creative energies of the universe, and has, in the four years since its publication, spawned a remarkable number of support groups for artists dedicated to practicing the exercises it contains. --This text refers to an out of print or unavailable edition of this title.

From Library Journal
This program consists of segments from the author's book of the same name (Tarcher, 1992). She recommends two ongoing activities that will conquer blocks and self-destructive tendencies: morning pages and artist's dates. Morning pages are three pages of writing, performed daily, about anything at all. This exercise overcomes the writer's internal censor and makes writing habitual, she claims. The artist's date is a weekly block of two hours spent observing, experiencing, and sensing. The balance of the recording describes how the artist can overcome human tendencies such as jealousy, fear, and addiction. This abridgment leaves much to be desired. In her introduction, Cameron States that the audio is an interactive abridgment of her 12-week program. There is nothing interactive about it, however. The sound quality is poor, and the content is similar to the many available 12-step programs. In that sense, it is redundant and will appeal to a very small audience. Not recommended.?Joanna M.
